Tonight it was Treviso Radicchio. How does one plan a meal around that? And by the way, what the heck is it? Well, it is basically a red lettuce that can be consumed any way one chooses. Fire it in a salad, wilt it in a pan, bake it in an Italian dish, or even toss on the grill.
Tonight I put it in a dish similar to homemade macaroni and cheese, only this time wilting it in a pan with tomatoes, onions, garlic, and evaporated milk. The end product was pretty good and nicely complimented by sausage. The taste of the cooked radicchio was smokey with a hint of bitter, though the bite can be controlled by cutting off more of the white.
