Good eatin'

For supper tonight buffalo.  Local buffalo.  Initially, the beast was brought in and tended some years back.  The heard runs wild now and is owned by the local tribal corporation.

How it goes is that each year, a lottery is done, and for a fee one may be lucky enough to go on a hunt.  The thing is you gotta be a resident for the period of at least one year.

Next year we are putting in.  How awesome would that be?

A colleague gave us a pound of buffalo steaks and we cooked it up tonight.  Dang was it good.  I know I keep saying it but how lucky we are!  It seems that we will be in no shortage of meat for the simple deed of sharing our freezer with the hunter.
